What it says
The gardenia speaks of love kept secret, and of a joy not declared. The symbol comes from its behaviour as much as its whiteness: the flower will not be handled, and keeps the mark of every contact.
Why it browns
The petals are thick and water-filled, and their cells rupture under pressure. The browning is oxidation, like a cut apple — unavoidable and irreversible. A gardenia is handled by the base, or not at all.
The scent
Powerful, creamy, at once milky and green, with a mushroom note that surprises once noticed. It is among the hardest smells to reconstruct in perfumery: the flower yields nothing to extraction, and every gardenia note on the market is a reconstruction.
It shares this with lily of the valley, lilac and honeysuckle — the so-called mute flowers.
The Polynesian tiare is a gardenia, Gardenia taitensis. Its flowers macerated in coconut oil give monoi.
What kills it in a pot
Hard water, above all. Gardenia wants acid soil; watered from a hard tap it yellows between the veins within weeks. Rainwater or demineralised water, bright light without direct sun, and humidity — a radiator underneath is fatal.
